..food poisoning? no thanks!

After your big holiday meal, try to get leftovers into the fridge within two hours. Harmful bacteria grow quickly at room temperature. Transfer extra food to shallow containers, which will allow it to cool quickly, since putting a big pot of hot food in the refrigerator can raise the temperature to unsafe levels. Keep pumpkin pie in the fridge, not on the counter: it contains milk and eggs, which can spoil. If you haven't eaten leftovers within three days, throw them out. If you freeze them, eat them within a few months. Cold turkey straight from the fridge is okay as long as you're not pregnant or sick, bet heat other leftovers to steaming or at least 165%, and bring gravy to a boil before serving it again.

Remember, it is better to be safe than sorry afterward.
